Rhubarb! Signs of Summer
Keep an eye out for these brightly colored deep-red stalks found at our farmers markets. Rhubarb stalks are loaded with potassium and Vitamin C. Don’t be fooled by the bright-green leaves, as they are not edible and contain high amounts of oxalic acid, which can be toxic. Just stick with the tart taste of the stalk. Choose stalks that are well-colored, firm and decent size. The best cooking methods include baking and stewing for sauces like the ever-popular and delicious rhubarb pie. Here’s to the delicious signs of summer!
