Spice up Your Avocado Toast

In the kitchen with Chef Daniel Najera By Daniel Najera   Chef Daniel Najera is a graduate of Schoolcraft College’s culinary program and is currently the executive chef of residential dining at Saginaw Valley State University. Before joining SVSU, he began his culinary career at the Ritz Carlton in Dearborn, then served as executive chef at Northwood University, St. Mary’s Hospital in Saginaw, and the University of Michigan-Flint. Chef Najera was born and raised in the Great Lakes Bay region and is proud to call it home. Enjoy his spicy twist on avocado toast! Spicy Avocado Egg Toast Serves 6 Ingredients:
  • 6 slices of wheat berry bread
  • 9 oz fresh avocado, mashed
  • 1¼ teaspoon lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 6 fried eggs
  • 2 tablespoons hot sauce
  • (Recipe to follow)
Directions:
  • Toast 6 slices of bread.
  • Combine avocado, lemon juice, salt and pepper.
  • Cover and chill.
  • Fry eggs.
Assembly:
  • Spread even amounts of avocado on slices of toast.
  • Top with fried egg.
  • Drizzle with hot sauce.
  • Serve immediately.
Hot Sauce:
  • 1 tablespoon, plus 2 teaspoons Sriracha sauce
  • ¾ teaspoon lemon juice
  • 2 pinches ground coriander
  • 2 pinches ground cumin
  • 2 pinches smoked paprika
Directions:
  • Combine all ingredients.
  • Whisk until well blended.
  • Cover
  • Keep chilled until needed.
